Durum wheat semolina

After harvesting and careful selection, the best durum wheat for pasta production is sent to the milling phase at the end of which the wheat is transformed into semolina.

The durum wheat produced for Terra Antica pasta is entrusted to Molino Bruscella in Genzano di Lucania, a company specialized in the production of high quality flours.

Production and packaging

After the transformation of durum wheat into semolina, we move on to the pasta production phase and finally to packaging. For this phase the semolina is entrusted to Antico Pastificio Lucano Srl of Acerenza which produces the pasta with an artisanal process with bronze drawing and slow drying at low temperature, followed by the final packaging with the Terra Antica brand whose currently formed are: Calamarata, Paccheri, Penne rigate, Spaghetti quadrati and Ditali.
