In these areas of the Lucanian hinterland there are areas in which the fertility of the soil and the climatic conditions allow the production of excellent types of cereals including the durum wheat variety Senatore Cappelli, one of the varieties with which the semolina of pasta is produced characterized by the Terra Antica brand, the brand through which the products of the Canio Ricciuti agricultural company are marketed.

The durum wheat is grown in the lands of the Canio Ricciuti farm located at around 1,000 meters above sea level, here the production cycle begins in November with sowing and ends in July with threshing. A process marked by the growth and slow maturation of a completely natural mountain wheat where no use of fertilizers, herbicides or other chemical elements is made.
